What about Tips and Tricks?

Bechamel Sauce

When making this sauce, combine flour and butter in a skillet, or a pot with a heavy base like copper, or steel. The reason is so the flour doesn’t easily burn.  The flour and butter forms the base of this sauce.  The trick to making it properly is to heat the combined butter and flour mixture while stirring for about three minutes on medium heat.  When the mixture starts to turn slighty darker in colour and begins to smell like baked pie dough, you know it’s ready.  Add milk or cream to create the sauce, stir vigorously with a whisk to combine!  Bring to a boil while stirring.  Add salt and pepper to taste.  That’s it!  It’s pretty simple really.  It should take about 8 to 10 minutes from start to finish.
